I can find zero information on tapping sassafras trees. I've been experimenting with tapping different trees, and while out today we stumbled upon a huge sassafras. Figured we would give it a shot and put a tap in. Immediately the sap began to flow very well.
I have read about the rat studies and safrole, but the doses were huge concentrations and rats have a metabolite that humans don't which increases the uptake of safrole. So I am not worried about toxicity from the sap.
But what about boiling it down into a syrup? Again, I can find no information about this online. Thanks.
