Will potatoes grown this year sprout?

We'd like to plant more potatoes for a fall harvest. We planted our spring potatoes a little late - first week in May, south part of zone 6. The plants (7 different kinds I think) all have potatoes growing at varying stages of maturity. Is it possible to dig some and break their dormancy somehow (?) or are we better off ordering more seed potatoes?

I've never tried it, but a couple of the ones I dug from my spring planting were already sprouting. You may want to order some, and do a test of the ones from this spring, too. What could it hurt?
