whole wheat biscuits

    i have the chance to practice baking biscuits in a dutch oven soon. anyone care to share their favorite tried and true recipes for whole wheat biscuits? all replies appreciated!

    You might try posting this on the cooking and crafts forum.

    You might be able to just use a regular recipe, and add a little more leaven.

    Here's my recipe:

    BISCUIT MASTER MIX


    18 c. mixed flour [1/2 whole wheat, 1/2 unbleached white all purpose flour]
    9 T. baking powder [NOT Calumet!]
    9 t. salt
    2 c. non-hydrogenated LARD

    Store in the fridge in an airtight container, or cold storage; it keeps pretty well.

    Use as you would Bisquick baking mix.

    Based upon, for biscuits:

    2 c. flour
    1 T. baking powder
    1 t. salt
    1/3 shortening
    ¾ c. milk

    thanks for another recipe! this one is 1/2 and 1/2 of each. i think that's the proportion i will use.:)
