You can dig smaller ones--"new" potatoes when the vines start to die back. Here, we dig when the tops are dead. Don't forget, do NOT eat any that are green or have green on them---POISONOUS!

I think you can trim the green off and the rest is fine though.

We dig ours up when the tops are dead. Sometimes we wait until the stems are dead too. Just depends on what else we have going on. They'll wait for you.

After you see blossoms and they die back, you can check for new potatoes.
The main harvest when the tops go brown and die back. The tubers won't increase in size once the tops are not viable.

while your on the subject of potatoes what happens if you cut them back before they die off ??do they grow bigger or would the rot?Just curious.
