Basketball last night, so I had a sloppy Joe and chili dog there.
basketball again this morning, so I got a mini sub there. I’m sitting at the diner waiting for my son to get done, I had my Crazy mother trucker with fries. I forgot pics, but I’ve posted it many times.

I get hungry every time I see the pics of the crazy mother trucker burger. 🤤

Speaking of burgers, we cooked burgers tonight, made some mac n cheese, and cooked some onion rings and tater tots in the air fryer.

I changed things up at the diner, instead of yesterday’s Crazy Mother Trucker, I got the Slap it to Me burger today.
Going shopping for groceries later. The wife asked what I wanted her to make this week. I told her we haven’t had chili for awhile, and it sounded good because of this cold weather. So picking up ingredients for chili later on today.

Lots of leftovers today, but I did go out and brought home a lot of ground round. Pressed out many burgers, and DH fired up the grill since we are not in the deep freeze at the moment. They are packaged and soon to be frozen for instant burgers to please the burger lover here.

I also picked up a thick slice of ham for split pea soup to be made tomorrow.

Tomorrows dinner will be a med sized roast in the slow cooker with veggies and that should cover us for dinners until the Turkey breast I took out of the freezer today defrosts. We should be good all through the week for dinners, and I’ll probably make lots of different sides to go with the turkey.

Lastly, I found a recipe for Brownie Cookies, we thought they would work well for homemade ice cream sandwiches. I’m not sure what day those will be made, but soon.

I'm staring down some goat side meat. Why won't it just hop into the pan and make itself into something tasty and delicious?

Marinate and then slow cook? Pulled goat?
Oooh, I'll do that next time.

This time, I wound up cooking it for a loooooong time on the stovetop. Took so long that I had to plan it for the next meal: stir fry veg mix with the meat, lots of extra pepper, garlic, onion, sesame oil, hot pepper oil.

It got the DH Seal of Approval. :)

I picked up a Tofudee Tofu press from the thrift store today, I guess you can see where this is going…I also picked up Tofu at the store. So it seems I get to try something very soon that is new to us, (probably just me) I’m not sure what though. The Tofudee website has recipes with very colorful photos.
I have not had tofu in a loooong time, I also never pressed much liquid out of it in the past either. Maybe that’s the trick?

I used to eat a lot of tofu years ago. I only cooked it a few times as I mostly put it on salads to get extra protein in there. I never used a press.

doozie - with the tofu, besides pressing out liquid, I think it also depends on if it is "soft" "firm" or "extra firm". Then again the last time I had eaten tofu, it was bean curd Szechuan style with some chili oil on the side.

For breakfast this morning, had lots of strong black coffee, some apple wood smoked gruyere, and some grapes. I had packed leftovers for lunch, but then some coworkers were going to pick up chipolte - so ended up ordering a steak bowl (with rice, black beans, fajita vegetables, corn salsa, tomato salsa, cheese, sour cream, lettuce and guacamole).

Tonight for supper we're having lasagna and some focaccia bread.
