With cheese on top? :)
The cheese was stirred in, and since I didn't put the hot dish into the oven, I left it at that.

But if I do a baked version, I will certainly cover the top with shredded cheese. :)

The combination was pretty darned good. This recipe will be added to the Pony Canon of Tasty Noms.

Last night we ended up enjoying some burgers and tater tots for supper.

Lunch today, I had some udon noodles (gotta love those teriyaki udon noodle packs they sell at Costco in the refrigerator section).

The plan for supper is BBQ chicken thighs and some mashed potatoes. For another vegetable, there will either be carrots or green beans.

I picked up some nice thin asparagus at the store the other day. The plan is to wrap it with bacon, drizzle some olive oil, and sprinkle with parmesan cheese, salt, and pepper before baking. Not sure if I will make some for lunch tomorrow, or if it will go with supper tomorrow.

Home for dinner and it was a big green salad with sliced ham and hard boiled eggs as the protein. Cherries for dessert. I'm going to be home for dinner tomorrow night too, and right now the sheet dinner Drakes Mrs made sounds like a good idea too as I picked up some boneless chicken breast tonight and am not sure what to do with it.

My son played a basketball game at our biggest rival up the road. There’s a few places to eat here too. I suggested we go to the bowling alley and get our fish fry. The waitress from our hometown diner is a cook there at night. My plan was to tell the waitress I was very disappointed with our food, and I want to see the cook. Ugh, she’s off tonight. Well we got our fish and salad bar anyway. The kids are bowling now as I type. Food was so so. They do have good pizza here though. Next time I’ll get that.

Went to the diner after my Saturday morning trip to the dump. Tuesday is the waitresses birthday, so by tradition I buy a random card and cross things out and doctor it up to make a birthday card for her, I then stuff it with lottery tickets. My birthday is tomorrow, so she told me to stop in tomorrow for a “special present” she got me. We’ll see if I have the time. :)
So anyway, FOOD! I had the “Crazy Mother Trucker” which is similar to my usual “Slap it to me” burger, but with jalapeños instead of chipotle sauce. I also got a cup of the cheesy broccoli soup, made with pepper Jack cheese.
I also made sure to stop in the kitchen and make sure my son was actually working and not sleeping.
My wife also got a piece of that pie to go. I have no idea what they call it, but looked like more than I could handle at the moment.

Drake, That pie (and everything else) looks delicious!

My cheap thrills at the thrift store had me picking up a vintage Guardian service/ Miracle Maid duplex utility pan for $3.99. It’s Hard to find much info on them, but I did find a recipe online for Knickerbocker Nut Bread which I will attempt to make today. It is cooked on the stove top.
Thank goodness a blogger for Guardian Service cookware noted a recipe misprint from a pamphlet that was written for the item and tried the Nut bread recipe with a correction.

It didn’t even stick when I flipped it to cook the other side! Taste Test was good.
Only thing different about it is it’s salty. I have used salted butter/unsalted depending on what I have on hand in baking and never noticed a salty taste, and the only butter that was used is the melted butter before pouring the batter in and it is was very salty, but it goes well with the nuts…so I’ll try unsalted next time.
I’m not sure I will even keep the outcome due to the salt, I might just cut the outside edges off, darn…

After church I had to go to the diner to see what my present was. I guess I’ve reached celebrity status, as I was on the menu board. :)
I got a bacon omelette with extra bacon, American fries, and whole wheat toast to go along with my present-a t shirt.

On Friday, my kids wanted broccoli cheese soup, so made a batch of that. I had a different sort of craving, so cooked some ground beef, finished cooking it by adding some bulgogi marinade and simmering for a few minutes, then put it on rice, along with some kimchi.

This was a travel weekend for me, so Saturday evening ended up being a Jet 10 from Jet's pizza.

Sunday morning I had some Racine Kringle for breakfast (bought it at a store local to me that sells them, and took it with me to Michigan). Sunday evening was a double deluxe burger and some onion rings. I survived the drive in the snow, and so this morning had some more kringle with my coffee.

Will see what supper brings, my wife made it safely back home from her mission trip - so she may have some sort of supper request. :)

Last night my wife took me out for my birthday, to a supper club about 20 minutes away. It’s a nice white tablecloth type place , unlike the dives we usually eat in. I got the”King cut” of prime rib, and asked for the end piece. I actually had a small chunk left over to eat after work today. I forgot to take pics, so bonus food related pic- this is a picture of when my now 12 year old got caught eating peanut butter directly out of the crowd pleaser size tub of peanut butter.
