What to do with all these onions?? HELP!

    Neighbor just gave me a huge box of fresh veggies. Mostly onions (yellow and white) with a few tomatoes, jalepenos. Prob about 15-20 pounds of onions....what should I do with them. I already have plenty of dried ones. Anyone have any great recipes???

    Why not chop and freeze them in 1 or 2 cups portions for future use? I put 2 cup portions in freezer bags, squeeze out the air, smooth and freeze flat, and they will keep for a couple of years and take up very little freezer space.

    I dehydrate onions and love to use them in soups, casseroles and so on. They become VERY strong when dehydrated and keep very well. I store mine in quart jars with 02 absorbers. Lots of onions stored in a tiny space with a very long shelf life. You canna beat that!

    We grow a onions and get about 100lbs of them. We just cure them in the sun after digging them for about a week then put them in burlap bags down in the basement, About 62 degrees down there and they keep all winter long. Use them as needed.

    Chop them up and freeze them. I do this with almost all my onions because they're so easy to use this way.
