It isn't just moisture you are trying to prevent - it is bug infestation. Robbing the packaging of O2 keeps the bugs out.

I would also use the mylar, O2 and buckets for things taht store for less than 30 yrs and gallon cans for those things that store for less than that amount of time.

Same situation, since I'm near you. It depends on how much you're storing. I put things like rice & powdered milk in gallon jars. Flour is in buckets with gaskets. Oatmeal is in buckets. We usually go thru it pretty fast, but one time we misplaced a bucket - fortunately a small one - & didn't find it for several years. It wasn't buggy, but it was stale. The chickens loved it.

If we were storing for more years I would probably do it differently.
