I usually do more reading than posting but my curiosity is peaked and I can't seem to find the answer. How do people store dairy products for long-term use? I know you can freeze certain items and you can put at least hard cheeses in wax and I have read something about some people canning milk and cheese... I suppose most people just make butter every week and keep a starter going of yogurt, buttermilk, etc?

I freeze milk, I also use all my extra jars up in cannning milk at the end of the year, it's used in cooking and soap. I freeze soft cherve, and wax hard cheese, even ricotta and cottage cheese freeze, I use them in cooking not fresh eating though. I keep yogurt and kefir going throughout the year and use frozen milk...sorry we buy butter but we purchase it in bulk and freeze it :) Vicki
