I try to eat Organic whenever possible, and I usually buy potatoes in five pound sacks. One bag that I bought a few months ago was sitting under the sink, almost completely forgotten about. Then, last week, my cat stuck her head in the cabinet, and quickly backed away with a look of mortal terror on her face. I looked in to see what she found, only to see a huge mass of potato rootlings growing in every which direction. EUREKA!!!, I thought to myself. It was the mother lode of seed-potatoes! I now have another 20 hills of potatoes growing in my garden. If I have time to dig them all, I should have enough potatoes to last me through next spring, with plenty left over for all my friends and neighbors to plant next year. I guess I am now a potato farmer....
