I made a huge pot of homemade salsa--took me hours to do the tomatoes--finished boiling it and was waiting for it to cool down a bit before putting it in freezer bags and freezing it....I FELL ASLEEP!!!! It sat on the stove all night...
Is it safe to bring to a boil again and them freeze? Or do I need to throw it away and start over--I do not want to poison my family.

Sorry, but overnight is not long enough for salsa to begin to ferment, and even if it did, freezing will be safe. It's a regular practice to allow food to cool overnight before freezing. Not to sin, let's not debate or waste. This is home food, there's no need to protect against strangers sticking their fingers in the pot.
