This is my first year growing them and I need to know when to pick them for shell beans. Do they keep putting on if you keep them picked or do they just set on once?

Pick them when the hull is a nice purple, and you can feel the peas firm in the hulls, but before they dry out. They will continue to bloom and produce several pickings if you keep them picked.

It's certainly okay to do that. It just depends on how mature you want the peas. If you want a more tender pea pick a little sooner; a drier pea pick a little later. That's the wonderful thing about growing your own food. You can customize it to suit yourself.
