Pickled eggplant

    I have some eggplant that was the last of the summer garden. I am wanting to pickle it does anyone have any recipes? thanks.

    I don't have any to pickle, don't want any to pickle....there is enough stuff to pickle.. to mess with something I don't like anyway.
    I sure it is a good idea...for someone......

    I grew up on my Italian grandmother's pickled eggplant and miss the HECK out of it. Everything I ever ate commercially just is soooooo not the same. Unfortunately she passed in 1982, and that recipe was apparently only known to her.
