According to industry data presented during the court proceedings, demand in the past five years for organic milk is up 20 percent to 30 percent annually; for organic fruits and vegetables, growth has been 10 percent to 20 percent a year; organic meat, poultry and fish have grown 32 percent to 120 percent a year; organic snack foods are up 15 percent to 30 percent a year.

It's all ready being played out in coprorate arenas. Organic is big money and for the last couple of years I've run across stories in the farm papers about how small time guys are complaining that the big corps are horning in and taking over. Funny how the price doesn't drop much though.......
