NC slaughtering and ham curing

    I have been on the phone and the internet for over a month now trying to find a place to get my pig slaughtered. There are several places that will kill and wrap. most will also make bacon and sausage but I have not found one that also cures ham. With the price of gas these days I can't afford to take the pig back to Maryland to get it processed. I live by Durham, any help? :help:

    I would think if they did bacon, they would do ham too...............good luck!

    I agree with Swollen Tongue - all the butchers here that do bacon also cure the hams. Are you looking for a particular cure? Maybe the way you are asking - they think you are asking for something 'special' instead of regular cure.

    You could always try doing it yourself, or have the hams fresh - like pork roasts. I'm sure you could do a search here and figure out how to do it yourself.

    My, those pigs can eat towards the end, can't they? I've got two long overdue myself!

    Here in our neck of the woods you have to reserve a slaughhter time well in advance in the fall or winter. I think at least a couple to three months. If you didn't preplan then you will have to keeping feeding them or do it yourself. Good luck

    I know for sure that KEY packing does not do ham curing. Apparently in NC you have to have a special permit to cure meats. I have called the state dept of agriculture who sent me to the state pork council who gave me names of a few individuals who they knew that cured hams privately.

    I remeber a PDF that I found from VA that gave instructions on how to do it your self. Not that hard jsut need some space and salt. I will see if I can find it. and send it along.
