Who spatchcocks their meat birds at time of harvest? I was thinking of doing this and to get a better, more stackable product in the freezer. In addition I would roast the backs, etc and make and can both broth from the bony, less edible parts.

I don't, might be beneficial to rest the meat before you spatchcock and package. Just my opinion. I processed out a couple yesterday and we opted to rest the meat before doing anything else with it.

Oh yes, absolutely, they'll rest 3 days before packaging.
