Is it hard to make cheese? What kinds of cheese do you make?

I've been using the milk for drinking and baking so far but I would really like to try my hand at cheese.

    Thanks for any tips!

Soft cheese are really easy. Hard cheeses are more difficult. I still haven't perfected hard cheese, they always turn out too dry.

Check out cheesemaking.com for recipes, pictures, and supplies. They're chevre is delicious, and so is the Fromagina. And the sweet yogurt starter is unbeliveable!! I mean really really really good.
