Just recently my husband was diagnosed with a Galactose Allergy caused by a tick bite. This allergy is somewhat new and still being researched. Basically, he cannot eat any mammalian foods. NO: beef,pork,goat,milk,cheese,dairy. We follow a traditional diet and follow Weston A.Price diet guidelines which means we eat lard,raw milk,organ meats, and fermented foods all from grass-fed/pastured/our own sources. We raise pigs,chickens,and ducks and eat only our own meats. Since this diagnosis and the diet change, my husband has been feeling MUCH better, but I am running out of recipes and dearly miss butter. We made rendered chicken fat (Schmaltz) and have been using that as a butter substitute. Has anyone else heard/dealing with this and/or have any "Alpha-Gal" recipe ideas?
