When we came back ot NJ a few months ago, my in laws garden was in full swing...and overgrown! The three chest freezer they own are stocked full (Pig-pig went to freezer camp last month :D)--squash, zucchini, green beans, etc. I even found about 5 pounds worth of walnuts in the freezer (I think I will be harvesting the drops from their black walnut trees).

Anyway, what do I do with the 10 Ziploc bags full of frozen canteloupe chunks? I thought jam or something of the sort, but do you have any other ideas? :shrug:

I haven't tried these but had to look on the internet. They do look good!

Canteloupe Sorbet
4 cups frozen canteloupe
1 frozen banana
1 t. fresh lemon juice
Place all ingredients in blender or food processor, and blend until smooth.
Place puree in a freezer safe container, cover and freeze for at least four hours or overnight.
Break up frozen puree and process again briefly.
Return to freeze for at least 30 minutes before serving.
Can be served with a little fresh mint on the side.

Canteloupe-Lemon Smoothie Recipe
2 cups cantaloupe, chopped
1 cup plain yogurt
4 ice cubes
2 tbs lemon juice
2 tbs honey

Place all ingredients in blender container.
Blend until smooth.
2 servings.

What do they normally do with their frozen cantalope?

I think the sorbet and smoothie recipe sounds delish!

I can probably get away with the smoothie type recipes as :banana02: are $$$ around here--thank you for all your wonderful suggestions! :sing:
