Our all time fav is Granny Smith, but I'll dry just about everything that isn't bound for cider...a good, crisp, late apple makes an awesome apple chip.

There are many delicious varieties of apples to use for dehydrating.

My rule of thumb; make sure it is a good eating apple and fully ripe.

Dehydrated apples won't improve in flavor and sweetness if you use an inferior tart apple, unless that is what you like.
