I just started a program at my health club and they are using the exchange diet. My personal plan calls for 6 servings of veggies and 4 servings of fruit.
I am looking for more options for vegetables - especially ideas for things I can put in my cooler bag for lunches at work.

Any ideas?

Look up Alyssa Cohen for the raw food diet. She has a website too called www.rawfoodtalk.com and many good recipes and ideas about how to manage a diet mostly of fruits, nuts and veggies. I used this raw food diet to lose weight and to help with a couple of discomfort issues with my health and it really helped.
