pickled Beets?
I've tries a few, and they are ok, but I'd like to find one that is a hands down winner.

Here is the one we like.
35-40 small beets (can use any size to fill about 6 pts), 2 cups sugar,2 cups water,2 cups white vinegar,1 tsp ground cloves,1 tsp allspice,1 TBS cinnamon,1 tsp whole cloves.
Place beets in boiling water. Cook till fork tender then place n cold water and slip skins. Slice beets 1/4 thick and pack into jars. Bring all other ingrediants to a boil and simmer 10 minutes. Pour over beets leaving 3/4 inch headspace, set lids and bands then process 12 minutes in boiling bath.
