Evening everyone! Curing question here. I have two hams that came straight from our butcher to our freezer. I have gathered from different sources that I can thaw these in the fridge, then apply dry cure and place back in to the fridge to go through the curing process. After they have cured would I/ could I, refreeze them, or can I hang outside in my shop to follow through till spring/ summer and the sweats?

    Thanks Chris

    Do this with many Meats.

I know the best is fresh. We use to Cure Whole Hogs and do some things that now days people frown on.
