Canned Tomatoes

    I canned my very first tomatoes last night!!! WooHoo!!! Such a good feeling!
    I canned 7 quarts, and 6 pints. And still have 1/2 of a 5 gallon bucket to can tonight. Anyone have a good Salsa recipe they wouldn't mind sharing. :dance:

    This isn't really salsa, but my friend makes good pico de gallo and it is SIMPLE. All you need is diced tomatos, onions, lemon or lime juice and cilantro. Very fresh and tasty!

    Don't forget a little salt for the pico de gallo. And in Texas it requires some jalapenos too! :)

    Cilantro question:

    Does it can well? I read somewhere (who can remember where?) that it doesn't take well to being cooked.

    But if it works for you folks, then I'm off to the races on canning salsa WITH cilantro!
