Butchering dairy fed pork question.

    We droped off a few hogs @ my processor today, pastured and grain fed.
    While there I asked him if he processes dairy fed pork. His answer
    surprised me.

    He said the fat does not congeal as corn fed pork, it's to slick. The hogs
    were fed scrap candy, potato chips and other by products from snack food
    companies in houses and outside pens.
    You folks who raise hogs on dairy, pasture and hay can you coment on
    the texture of the fat and meat? What is the difference between the two
    meats?

    I know that in the deep south where people used to "hog off" thier peanut fields there was a problem with the fat being too soft.
    I have fed milk to alot of pigs but not as their sole diet and never had a problem.

    I've never heard of this. A friend of mine raises her hogs on goat's milk - haven't heard this from her either. I asked my butcher about milk fed pork and his only comments were that the meat would be lighter in color, and finely textured - and that milk was a fine food for pigs. He never mentioned any problems/differences in the fat - although I didn't ask that specifically. I've got another set of friends who raise theirs primarily on surplus whey from their artisan cheese processing - have partaken of pork chops at their home, and didn't notice any difference in taste/texture from my own grain/milk/slops raised pork.

    The increase cost of corn might be going to $6.00 a bushel by spring
    of 07 is a primary concern for my pork and poultry production. We are
    considering getting a few Jersey milk cows for cheese and the surplus
    for hog feed. Hay, pasture and dairy will be their diet while roaming
    the woods and pasture. I've read many posts here from folks who
    are doing just that with great success.

    Those of you who retail your meats, how do your customers react to
    the non grain dairy fed concept? Do you charge a premium for your product?

    This is not true. We have raised pigs on pasture/hay plus dairy (whey/cheese/milk) for years and it produces the best taking pork and the fat is most excellent. There is no problem with congealing. The fat is whiter than corn fed or commercial feed fed pork. Dairy fed pigs produce a sweeter finer quality meat and fat. We have raised hundreds of pigs on dairy.

    In a typical daily feed how much milk, cheese or whey is fed to
    each pig or is there a weight gain ratio to go by?

    How many hogs could three jersey milk cows feed? :1pig: :p

    Dairy fed pork and pork feed high amounts of Distillers grain have been a recent topic in many trade magazines. National hog farmer has an article right now i believe. The concern is the bacon... It dosn't hold up to to the quick commericial process of curing bacon. The fat is too soft, no one is saying its bad ....its just non desirable on a commercial hog.

    Three Jersey cows with out calves could probably feed more pigs than I want to think about! LOL!!

    Our pigs eat approximately 3.6 gallons of whey per 100 lbs of pig per day. This is in addition to pasture (warm weather) or hay (winter) in the amount of approximately 0.8 lbs per 100 lbs of pig per day.

    When we have excess milk available it comes out to more like 2.5 gallons per 100 lbs of pig if I remember correctly. Again this is with pasture/hay.

    When we have cheese trim available that comes to about 2 lbs of cheese per 100 lbs of pig but that is harder to get a number on as we have never had long periods of feeding only that and pasture/hay to satiation.

    Let me see if I have this right?

    I have approx 3,500lbs of hogs and increasing daily, in an 8 acre pasture
    and wooded area.

    35 x 2.5 = 87.5 gals of milk per day for my pastured hogs.

    87.5 gals of milk per day divided by 4 gals of milk per cow per day = 22
    cows I will need to feed my milk, pasture and hay fed hogs.

    Realistically I plan to get three Jersey milk cows for our own consumation
    of 2 gallons a week and the rest for a few hogs.
    2 hogs should require the balance. Does this seem correct?
