Our first litter is 9 weeks old tomorrow. When we went out to check on everyone, one of the bunnies had managed to put his hind leg through the wire mesh twice and break his leg. Poor little guy was screaming, so we had to put him out of his misery.

Butchering wasn't that bad at all. Skinning was very easy, but I wasn't prepared for the smell. I will butcher on an empty stomach from now on. He dressed out just under 2lbs and we will roast him up tomorrow.

I also have a really good sense of smell, so it tends to hit me harder than most folks.

I filled the bottom of a turkey roaster with onions, carrots, and potatoes and put the rabbit (stuffed with fresh pineapple sage from the garden) on top. I poured equal parts red wine and chicken broth over everything and added a healthy dose of minced garlic. Baked covered at 350 for an hour.

It was awesome! But be warned if you try this--it's pretty rich. I needed a nap afterwards.
