Love to eat a basic chicken salad so I thought I would try it with rabbit meat.
Boiled a young kit for a couple of hours until the meat was very tender. Pulled it off the bone and made it up just like I do with the chicken.
Worked great and tasted wonderful. I am finding some minor problems with small bones that sneaked into the process. Will have to watch a little better when cleaning the next one.
Need to get a pressure cooker, though, to reduce that cooking time.
