Best spices and way to make sausage

    What do you guys do to make your favorite sausage?
    I have never attempted to make sausage before so I don't know what I am getting into but I would like to know, and I would like to know what spices you guys like to use.

    Maybe this should really be in the cooking section? :shrug: I don't know but I just thought there might be more hog people in here! :)

    We use sage-red pepper -black pepper and salt and sometimes marjoram.

    hey bob i also use the #10 in both pork and venison.....its a great mix...mink

    I'm in the process of studying and finding all the recipes I can so I can make my own sausage too. Do a search and play around in the archives. You wouldn't believe all the great sausage recipes that I have printed off from HT.

    That's the way I do it only I seldom use the marjoram usually just salt, pepper, and home grown sage. Everybody I ever had eat it loved it. :cowboy:

    Up North is right, there have been a lot of good ones posted here.
    If you are new to making sausage, try frying up a little in a pan to taste before you package all of it. That way you can tweak the recipe to your liking before doing much work. :)
