Just for grins I bought a pack of artichoke seeds and we started the plants. Well we've got artichokes and I've got questions. When do you harvest? If the flower is it too late or do you harvest after they flower?

You harvest the bud. Mine are almost ready now. I am in zone 5.

I don't want to sound dumb but what do you mean by "the bud"? I have artichokes on the plant and now some have a purple flower on them. Do you harvest before the flower or after?

You want them to be green and tightly closed.

I've let a couple go all the way to flower. Should I leave them on or cut them off? I'll harvest them while all green now.
