I still remember the long hours I spent slicing tomatoes for the dehydrators. One season I did about 60 lbs all by hand. The angle of the blades was too flat to slice on the mandolin that I bought.
Now my thought is to crush the tomatoes or blend them skin and all. Then put the mash into a cloth basket and let the liquid run into a pot below. Once it stops running the somewhat drier mash can be spread out on the silicone sheets and the liquid can be spread onto a flat dish. This should be a real time saver.
I run my dehydrated tomatoes through the blender so the end product should be the same.
