I butchered two roosters. One was fine. The other smelled musky before I butchered him and his fat was gelatinous and gritty. Anyone know what's up?

I don't know. I think I'm just going to toss him. I put him in the freezer marked "weird smelly chicken" in case I needed to get some more information from him, but I had no intention of eating him. Just wondering if the other two roosters I've not butchered will be similar. I'm planning on using the remaining two as baby daddies, then butchering them when the hens go broody...

He might make a good donation to a veterinary college.
There's one in NC that will do necropsies for minimal fees or often at no charge.
You could contact your state's veterinary department to see what is offered near you.

Visceral gout or chronic fat necrosis are possiblilities off the top of my head. As for a smell, I'm not sure. A poultry pathologist would likely know more.
