So what is your favorite thing to do with an overabundance of green tomatoes? I planted late in the season and didn't think I would get anything but I've got enough to can a few quarts of sauce and now I'm left with a lot of green tomatoes and cool weather coming. Don't think they will ripen.in
Ridgerunner & Anniew are right here, you can just pick all of them...one year I had six 5 gallon buckets of green tomatoes. put them in a cool place like the garage. You have to go through them regularly( at least once a week), pick out anything that gets bad spots. bring them into the house to ripen quickly & putting into a paper bag or wrapping in newspaper makes the ripening happen more quickly. They will last a very long time. Once you get to a manageable number left, make a batch of green tomato salsa or something else with them to finish them up.
you can wrap each of them in a sheet of newspaper and store in a cool dark place. they will ripen slowly and not all at the same time.
keep checking them,remove any bad or ripe ones.dont let mice get to them.
Green tomato pie.
4 cups peeled thinly sliced green tomatoes
1 1/4 cup sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
4 - 5 Tablespoons flour
2 Tablespoons lemon juice
Blend together sugar, spices, salt and flour. Toss with tomatoes and lemon juice. Place in a pastry lined 9 inch pie plate. Adjust top crust. Sprinkle lightly with white sugar and poke a few holes with a knife or fork. Bake at 425 degrees until tomatoes are soft and crust is slightly browned, 50-60 minutes.
This is really good. Tastes like apple pie. Really. I make it gluten free now, I sub the flour in the pie with about half the amount of cornstarch.
You can even add a puree of green tomatoes to jello, end result - jam !!
We've used raspberry, but any dark color should work. Tastes wonderful, and nobody believes what they just ate !!
Yes, would love to have the recipes for everything mentioned here. Pixiedoodle's spice cake and pickles, and the green tomato salsa, and picadilli.... it all sounds great! I'm hoping to start picking everything this weekend....had frost on the ground a tiny bit this morning....brrrrr.
