Italian Chicken

Amounts are flexible depending on how many you want to feed, so I'll just give the basic idea.

Grill some onions and mushrooms until tender, and put into a casserole dish.
Use boneless, skinless chicken breasts.
Dredge them in flour, egg wash and bread crumbs and lightly brown both sides in butter.
Place them on top of the mushrooms and onions.

Cover them with a layer of Mozzarella, Monteray Jack and Parmesian cheeses, then pour on enough marinara sauce to cover.

Bake at 350 for 30 minutes or so, until the chicken is tender and all the cheeses are melted.

It's easy to make a big batch so as to have leftovers or to freeze for later.

That sounds yummy! But if you're not crazy about chicken breast, you can make this version with thighs. I've done it with both and it was always good!

Put chicken thighs in roasting pan. Take the skin off if you want, we like to keep the skin on. Add loose Italian sausage or sliced up sausage in casings all around the chicken. Add tomato sauce, seasoned to taste and bake. If you want, add some cheese during the last few minutes of cooking.

Thanks, something new to try. Have some thighs in the freezer and some homemade sauce. Think this will be supper tomorrow.
