Freezing rosehips?

    My driveway is lined with rugosa roses, and last year I picked some and dried them on the dehydrator for winter teas. This year I've been picking a few as I see them ripen, and trying to dry them on a towel in the house.

    Could I just pick them as they are ripe and throw them in a bag, rather than dehydrating them? I have heard of rosehip jelly, maybe if I get enough frozen I can make some. Speaking of this, does anyone have a recipe for rosehip jelly? My MIL said the nuns where she went to school as a child used to make it and sell it for fundraisers.

    When I harvest rosehips, I cut them in half, spoon out the seeds and hairs, put them in a jar and pour honey over them. On goes the cap, wait 3 weeks. I put the jar with lid on in a saucepan of hot water to liquify the honey (takes about 5 minutes) and strain. Excellent taste, the vit. C is kept intact. You can put that rosehip honey in tea, plain hot water, on toast, whatever you use honey for. Yum!

    Ohhh...I have a rose with quarter size rosehips that I want to do something with. I'm sorry Zuska, but I want to make sure I got this. You put the rosehips in the jar with the honey...not the seeds right? When exactly do you pick the rosehips? Mine are turning orange/red right now. Can't wait to try this. Thanks.

    Rereading my post, I can see how a person would be confused. It does sound like I'm saying use the seeds. Do not put the seeds or the hairs that get in your skin and irritate in the honey. Just the flesh of the rosehips. Some people say pick the rosehips after the first frost as it sets the sugar. I usually harvest mine in early October when they're a darker red. Orange means they're not yet ready.

    Thanks for the advice! Rosehip honey sounds delicious! (And less sugary and time consuming than jelly.) Also sounds like the perfect Christmas gift for my sister, who loves rosehips, honey, and tea.

    You can freeze the rosehips, too. I would still take out the seeds and hairs first. Cut them in half with a knife and use a spoon to scoop it out. You can also make a cordial with the rosehips. I made a cordial in the spring with my apprentices with wild rosebuds and hawthorn flowers.

    Mmm, might have to try a rosehip cordial. We've done peach this year, and are waiting on some late season raspberries to do some raspberry brandy.

    Another question if I could, do you completely fill your jar with rosehips before you add the honey, or do you only fill it about partway?

    I fill the jar with the rosehips. I put some water in a saucepan, get it to boiling, turn off the heat and put my jar of honey with the lid on in the saucepan for about 5 minutes. That makes the honey more runny and easier to pour. I fill my jar with rosehips (full, nut not super packed) and pour the honey over it. Put the lid on the jar, put on a label with the date and that it's rosehip honey (comes in handy later to know what you got when you have jars of things on your counter). You can then strain it out 3-4 weeks later. I will do the saucepan thing with the rosehip honey before straining...way easier to strain that way. Very tasty.
