Easy Chicken

    I make sticky chicken: equal parts sugar and mustard. I do my in the over but Grandma did it in a heavy iron pan.

    is that all Forcast? just the sugar and mustard. anything else to it? I practically live on chicken and fish. ~Georgia

    thats all I do. maybe salt and pepper, I do mine in a covered casserole dish in the oven. we really like it. You can get fancy and use orange jelly nothing else just the jelly. Ok I have another one with meat balls (ground beef) make simple meat balls then simmer in grape jelly and BBQ sauce, again equal amounts.

    Line a baking sheet. Heat oven to 425.
    Steam one small bag of chopped spinach in the micro until heated through. Drain well.
    Mix equal parts mayo and shredded parmesan cheese - I usually do one half cup each. And a couple cloves of crushed garlic. Mix in the spinach.

    Tenderize three or four large breasts or boneless thighs. Lay on baking sheet and cover each with a portion of the spinach mixture. Bake until chicken tests as done.

    The great thing about this recipe is it is so versatile.

    Just parmesan
    Parmesan and spinach
    Cheddar
    Cheddar and jalepeno or anaheim or serrano
    Mozzarella
    Mozzarella, tomatoes and basil
    Monterey
    Monterey and sweet bell pepper

    And, of course, breascrumbs can always be sprinkled on top before baking.

    Marinade in Italian dressing, cook at 275, covered, until done. (2 hours) uncover until browned if you want....James

    Place 2 to 3 chicken breasts in a crockpot.

    Add:

    1 can corn
    1 can diced tomato
    1 can of black beans or other types of beans
    2 ish cups of salsa depending on how strong of a salsa taste you want
    some pepper and salt

    Leave it on the counter for the day on low. Once you get home, turn it to high until you are ready eat.

    Serve over rice.

    It's a super easy recipe and tastes great!
