cheesecake - cream cheese substitute?

    Can I substitute all the cream cheese with neufchatel in a baked chocolate cheesecake?

    Absolutely- have done it dozens of times. No difference taste or texture, just calories. Another cream cheese substitute which has worked fine (but I've only done it a few times for a recipe calling for this directly) is strained yoghurt- drained in a cheese cloth lined fine colander overnight or longer.

    Soft, unflavored goat cheese makes a great sub for cream cheese in a cheesecake. It's all I use anymore, and always get rave reviews.

    ricotta works too. In fact I just made a cheesecake with 2 cups ricotta to one 8 oz bar of creamcheese. Lovely dense texture.
