No Added Fat Granola (for eating with Greek Yogurt)

Granola at the store is crazy expensive and very often high fat. I make my own, and it's high fiber and no added fat. It does have honey in it, but I think you could use Agave instead. Haven't tried that yet.

3 cups rolled oats
1 cup corn flakes or other flake cereal
1 cup bran flakes or All-Bran
1/4 cup coconut (optional)
1/2 cup shopped almonds (or pecans, or walnuts, or whatever)
1 tsp ground cinnamon
dash of nutmeg
dash of salt
1 cup honey
1 tsp vanilla
1 1/2 raisins or dried cranberries or other dried fruit of your choice

Preheat oven to 300 degrees. Spray PAM on two 9 x 13 cake pans.

Combine all dry ingredients except raisins (or other fruit) in large bowl. Mix honey and vanilla in a measuring cup, pour over dry ingredients and mix thoroughly.

Bake 30 minutes, stirring every 10 minutes. Add raisins (or other fruit), bake five more minutes. Let cool and store in airtight containers.

I think Wind In Her Hair also adds some applesauce to hers when she mixes in the honey.

i have to avoid low fat foods as they tend to be high in carbs, which I'm totally cutting way back on..used to eat like 150 to 350 grams of carbs a day, now more like 15 to 30 net grams of carbs a day and doing so much better.

low fat diet was killing me

A "normal" granola recipe this size would have at least 1/2 to 1 cup of vegetable oil added. I simply don't put the oil in.
