Storing Potatoes

Not sure if I asked this or not- I am confused I can not find the thread? I have about 3 bushels of potatoes now- in my basement- I have some in 2 wooden cheeseboxes with the lids propped open a little and some in a large basket with a towel covering them~ I have a dehumidifier running too- do you think this is sufficient?

i wouldnt run the dehumidfier....they need some moisture to stay plump.


the open cheese boxes need at least news paper over them so sunlight wont turn them green. i like them in baskets,milk crates etc....think air flow.

It seems we aren't able to keep them very long during the winter. I do and have canned potatoes with much success. Very easy to do and keep forever. Don't get mushy after canning. A real treat on a cold winter morning for breakfast..Give it a try..

Thanks- I think that I will try to can some of them- I have them all stored according to size- there are alot of the 'Creamer" size and smaller ones- do you have to peel them to pressure can them? or can I jsut wash them really well?
