Encrypting individual files.

Also what's a good file eraser? Years ago I used a Norton program which over wrote the file with zeros then ones.

For individual file look at http://www.gnupg.org It's Zimmerman's PGP open source encryption software.

For file erasing I like Eraser from http://eraser.heidi.ie

A good file eraser makes it so they can't find deleted info. It works by over-writing disk to obscure any remnants from the file you erased. Kind of like writing words on top of each other until there is no way to figure out what the original word is.

For secure file elimination, I recommend Complete Data Wipe

TrueCrypt is indeed a leader in encrypting entire systems.
Another good option for compressing/encrypting is the free version of PKWare:

Second the recommendation for http://www.gnupg.org.

If you want something a little easier, there is an encryption capability built into winzip when you add files to an archive.
