the o2 if bad should put the engine light on mine did and it was a 1994 still before they switched to the obd2 computers in 1996

cutting off the cat for me has been a very good thing but i like stuff loud and always cut the cats off

now it could be the filter in the tank there a pain over the years there is all kinds of crap that gets in there and if you have a steel tank then they might have a small rust hole and then rust out letting enough air in there to start rusting the tank and filling it up and driving it throwing the gas around makes the rust fall off and plug up the filter

id check out the fuel pressure there like $20-50 at an auto parts store or if your nice enough with a repair shop thats not a huge one and has some time ask them if they can test your fuel pressure and if they have time they usually do and shouldnt charge you much

but when you did the plugs and cap did you replace the wires? that can cause it

also when your going and it shifts in to over drive and then the torque converter kicks in does it like shake and act like its not running on all the cyls?

also could be a head gasket do a pressure check on it some times it wont get coolent in the oil but it will be bad

or it could be a sensor of some sort

but yes get more info im pretty good at finding out whats wrong with stuff (mostly have to drive them and look them over but can some times find out whats wrong just by getting more info on them) been fixing stuff since i was like 10 years old and had over 8 cars before i was even 14 that i was fixing and reselling and im still working on cars im only 23 now but went to school for auto mechanics i know dodge pretty well mostly there trucks cause thats what i have been working on the last 2 years but its all about the same
