How do I know that a controller produces the proper rpm range and is compatible with the hydraulic pump?

Roughly here is what you must do
you are intending to turn a pump with a 1 HP motor and simply want to run two hoses to a remote location (not too far away) and then turn a paddle wheel of some kind with a hydraulic motor If you want more RPM and less power drop the displacement at the motor accordingly. If you want less RPM and more power increase the displacement at the motor. You must match the hydraulic motor displacement capacity to the output of the pump at the ratio needed to achieve the RPM desired at the paddle wheel. Try to locate a technical person at a hydraulic service facility to assist you in the components selection. It will be worthwhile to maybe pay more than there than to get a discount from just a clerk elsewhere. You have already accumulated a lot of worthwhile information from running the unit you have. Obviously the 1 hp motor is adequate for driving the device and you know the approximate torque to turn the device. It is only going to take a very small pump.

No matter what you use the paddle wheel will break the shavt if it is only suorted on each end. You need to have a bearing between the drive shaft and the paddle wheel. If you don't then you will have the same thing happen everythime. The paddle wheel will stiffen the part it run through but the drive will need to be suported on each side to keep the motor from making it flex.
