I think its up to the personality of the rabbit! I have both and either can be sweet and either can be cranky. Its like people, we all have our own personalities.
The English are smaller so maybe they are easier to handle for some.
I have had cranky English and French and sweethearts of both breeds.
I do breed for temperament to help keep the cranky types to a minimum.
I have found cranky with cranky temperaments often results in lots of cranky type rabbits.

So, I cull bad tempered buns when they occasionally pop up.
But trained and temperament are separate issues. They need to be handle often to be sweet, just that some wont be nice no matter what you do. Those are my culls and from my experience in all different breeds, bad tempered buns can pop up in any breed.
So IMO breed doesnt play that big of a role in temperament as breeding does. You can easily breed any breed of rabbit with bad temperaments. Just pick the nastiest and keep breeding the worst.
So I would choose the breed of angora more by the fiber and wants. English are more time consuming as they need a heck of a lot more grooming to prevent matting than French but you get more fiber that has no guard hairs.
French are easy to keep the wool from matting but they have a small amount of guard hairs and thats why they dont matt so fast and there is less fiber than the English.
English are smaller. French bigger but are dual for meat too.
Both are nice breeds. Both are calm breeds.
