Red Wattles, What is the scoop.

I had never heard of these until a month ago when I spoke for one for processing. I have read up on them and every thing I have read says lean no lard. I picked mine up and this is one loaded with fat. The chops have an inch of fat around them. Is this normal?

Any pig can get fat if they are full fed and don't get exercise. If instead this was a pastured hog then it might be a cross.

They were supposed to be free range, or so we were told. I didn't see the animal, but the butcher said it looked like a Duroc with wattles, so at least it was red. Waiting for supper to have some chops, no more cardboard for me from the store for me.
