Can you pasteurize right in the jars?

I'm thinking it would be handy to be able to pasteurize the milk right in the half-gallon canning jars that I store it in. Any reason not to do that?

Seems to me that I tried doing it in jars when I first started, but it took forever to heat it up that way. You can try different things to see what works best for you. The main thing is that you quickly heat up to 165, then quickly cool it down. Oh, that might be another reason not to use glass. How are you going to quickly cool down? I think that's the reason I went back to pans, now that I think about it. I was worried about heating the glass up and then putting it in ice water.
