Hi Lynn. First off if you're going to get goats you'll need 2 of them. As herd animals they are much happier and productive with a buddy. If you only want one for milk and don't plan to breed then get a wither, they're cheap and don't smell.
As for milking: a doe will milk as long as her body thinks she need to keep producing. When not milked out completely the weight and fullness of the udder release hormones that signal the body to stop producing. Thus if the udder is evacuated fully twice a day this will not happen. But once a does dries she will need to be bred again for her milk cycle to start up again.
