I did the "Deed" today

Butchered my Nigerian Buck..over 3 years old and oversize for the breed tho he was registered.

I have several questons if any care to help me. He was not just overweight; under all that hair was an amazing amount of internal fat. So much so it "laced" everything inside and almost completely covered the kidneys, In fact if I did not know they were in that area I would not have seen them. Sparkling white, dry, soapy waxy fat...everywhere. What is this good for? Anything?

Anyone got recipes for the liver? It was perfect..no mottling or spots or any indication of disease at all.

The neck roast alone weighs in at 5 pounds.

It was not as bad as I thought putting him down would be. One shot and he was down. The trouble came when my plans for hoisting him did not work. And yes..I read the wonderful tutorial here on the forum. But I weight 135 and he was over 100 pounds. Without a pulley I could not lift him high enough, take up the slack and get him tied off at the same time. I will plan better next time. bee

We just processed a yearling wether. Rendered the fat from the inside. Yes, that's the best stuff!!

I gave half of it to a friend who makes soap.

We are going to try frying with some of the other fat.

It's a journey of discovery.

Having participated in "doing the deed" with Emily Dixon, I can tell you that you have to
be pretty strong to get r done!! LOL. My husband and/or Emily simply hoisted those boys up...no machines required. Unless you can wait for Mac or Emily to come help you, it is probably best to go with Alice's idea!

thanks..looks good and on sale too..might just need it iffin I raise some of those 50lb turkeys this year..

so just cook the liver like I would any liver??

I half the chain hoist too with the bicycle handle bar looking thing for hooking into the legs. I hang my deer from it.

You'll find that chain hoist is *quite* handy for things other than goat processing.

DH built a wooden crossbeam hanger out back to hang carcasses from. If the animal is too heavy to get off the ground, we use the 4 wheeler to pull it up. Works great for one person.

if I had a 4 wheeler..but that is just a tad more expensive than the hoist..

I use a come-along with the non cranking end slung over a tree limb. Run a short rope between the feet and hang that on the come-along's hook and then crank higher as needed.
