Queso Fresco recipes?

Does anyone have some good recipes for using Queso Fresco? Its the only cheese I know how to make, until my Hoeggers order arrives. Its easy and plain, I know there must be some creative uses for it. Does it work in cheese cake? Casseroles?

Do you mean a rennet cheese, like chevre?

I use mine in quesadillas...between two flour tortillas..i put cheese tomato green onion cilantro..really good

Use like sour cream. Eat with bananas. Use it in cheesecake. Put it on salads. Mix with honey, cinnamon, and dried cranberries.

Sorry, I guess its really called Queso Blanco, not the cheese dip stuff. Its the one that curdles with vinegar. But thank you for all the recipes! Queso Fresco will be the next one I try, and I'm loving all those Mexican recipes! That and the possibility of cheesecake.
