Overflow of milk?

Make yogurt!

Have any frozen strawberries or bananas? Add them!

Because I just made a cake that has brought me back to Spring.

I was sitting here next to the woodstove after hauling hay to the rabbits, it's freezing outside, and for some reason, I really wanted to make cake. I never make cake unless I really have to for someone's birthday or something. I took a cake class once, learned a lot. But since then, cake and I have had bad history.

But, this was an urgent feeling that I needed to make a cake. lol So I did.

I'm not a big fan of homemade frosting, and that is also something that has ALWAYS troubled me, so I had an idea.

I added strawberry yogurt to the cake batter, because I love strawberries and it makes the cake wetter (sorry, the word moist really gets on my nerves). But that obviously wasn't enough.

I still convinced myself that I didn't need to make frosting, I could somehow not do that. So I mashed 1 banana and mixed 1/2 cup of strawberry yogurt in with the banana, and used that as filling AND frosting.

YES!

And it is not as sweet as frosting or icing, which I love, it's not overwhelming yogurt flavor, and it's springy and pretty. Yay!

If I ever have to make another cake, it better be this. lol

I call it the smoothie cake.

So, the moral of this story is, the next time you make a cake, make it like this, if you are a fruity sort of person.
  • I didn't put the yogurt on the entire outside of the cake, because it's not thick or anything, I just put it in the middle and on the top.
