Sure. Thaw, stir, and save for scrambled eggs, quiche, etc.
If you stir in a pinch of salt or sugar, you can pour the mix into a freezer bag and freeze. We do this every summer with extra eggs.

If you want to have an extra carton of eggs for Winter, pack a carton up and freeze it.

I don't think it's been this cold here in the last 20 years. At least I can't remember when it was last.
