Well ThAT was easy!
Thank you, Goat Servant, for the suggestion of good mobile butcher. Our Kinder buck was butchered today - 1 year, 1 month old. It went very smoothly just as I'd hoped. The mobile guys did exactly as I'd asked. They hoisted the fella outta the pen, moved him about 40 feet and dispatched with a single pop (which wasn't even loud), BEFORE moving to the throat.
I'm sure the last 30 seconds of his life was frightening, but it was not painful and it was exactly that - about 30 seconds and then lights out. We don't know the live weight, but hanging weight was 32lb, not including the entrails which is what, another 4-5 lbs?
The processors were so fast, by the time I had a pan cleaned for the heart, liver and kidney, they were waiting for it. All and all, they were in and out in about 15 minutes - very professional. (They even saved the testicles for me - said to remove the membrane, slice and fry! um....recipes anyone?)
